Heck, I eat a lot of fish but I&#039;m far from sure I&#039;d recognize a substitution for any of the mild white fillet fish.  Part of the reason they&#039;re popular is that they&#039;re inoffensive -- can we really tell them apart?</description>

I eat red snapper (or rather, alleged red snapper) all the time.  Who knows what kind of fish I&#039;ve actually been chomping on?  I think half the problem is that most Americans can only name three kinds of fish (tuna, salmon, and filet-o-fish) and the way most people cook them, they probably all taste the same.  Not a large enough pool of educated consumers.</description>

I&#039;m honestly not sure how much of a difference there is -- it&#039;s still sturgeon but of course it&#039;s a different species of sturgeon.  And some of the domestic species are also threatened or endangered, so it&#039;s not really an improvement from a conservation standpoint.  I&#039;m thinking I need to improve my palate for caviar so I can tell?</description>
